
Barrel Ale, also known as barrel-fermented beer, is an unfiltered, unsanded, virgin beer. Near the end of the beer's fermentation, a small amount of residual sugar will still be left in it that has not finished fermenting, or secondary sugar will be added, and it will be served in barrels, which are not pressurised at the time of kegging. Usually the secondary fermentation will be completed in the barrel, relying on the carbon dioxide produced to isolate the oxygen and pressurised. Many people will worry that the barrel will not leak, that's for sure, but after all, it is also close to sealed, than the rate of carbon dioxide produced, there will be a moment probably to dynamic equilibrium. So basically it is pressurised when you hit the bottle.
